Fresh and Crisp Cucumber Salad in a Jar

Ingredients:
– 7 large dill pickling cucumbers, unpeeled and thinly sliced
– 1 1/2 cups sliced onions
– 1 1/2 cups sliced red peppers
– 1 tbsp salt
– 1 cup white vinegar
– 2 cups sugar (or stevia for a low-calorie option)
– 1 tsp celery seed
– 1 tsp mustard seed
Instructions:
1. In a large bowl, mix the cucumbers, onions, peppers, and salt. Set aside.
2. In a cooking pot, combine the vinegar, sugar (or stevia), celery seed, and mustard seed. Bring to a boil.
3. Remove from heat and let the mixture cool for one hour.
4. Pour the cooled vinegar mixture over the cucumber mixture and mix well.
5. Transfer the mixture into jars and store in the refrigerator.
