    Flavorful Chickpea Salad with Protein-Rich Goodness

     

    Flavorful Chickpea Salad with Protein-Rich Goodness

    Prep Time: 15 minutes
    Cook Time: 10 minutes (for chickpeas)
    Servings: 2 to 3

    Ingredients:
    For Chickpeas:
    – 355g cooked chickpeas (weight without water)
    – 1-2 tbsp olive oil
    – 2 tsp paprika
    – 1 tsp garlic powder
    – 1 tsp cumin
    – Salt to taste (approx. 1/2 tsp)
    – 1/4 tsp cayenne pepper (optional)
    – 1 tsp oregano

    For Salad:
    – 150g chopped cucumber (1 cup)
    – 150g chopped red bell pepper (1 cup)
    – 200g chopped tomato (1 cup)
    – 70g chopped onion (1/2 cup)
    – 65g shredded carrot (1/2 cup)
    – 1/2 cup parsley or 1/4 cup cilantro

    For Dressing:
    – 3 tbsp extra virgin olive oil
    – 2 tbsp lemon juice or vinegar
    – 1 tbsp maple syrup or 2 tsp sugar or honey
    – Salt to taste (approx. 1/2 tsp)
    – 1/2 tsp black pepper

     

     

    Instructions:
    1. Heat olive oil in a skillet. Add chickpeas.
    2. Season chickpeas with paprika, garlic powder, cumin, salt, cayenne pepper (if using), and oregano. Stir to coat.
    3. Cook chickpeas until heated through and coated with spices, about 5 minutes. Set aside to cool slightly.
    4. In a large bowl, combine cucumber, bell pepper, tomato, onion, carrot, and parsley or cilantro.
    5. Whisk together olive oil, lemon juice or vinegar, maple syrup or sugar or honey, salt, and black pepper for dressing.
    6. Pour dressing over vegetables. Toss to coat evenly.
    7. Add cooked chickpeas to the bowl and gently toss to combine.
    8. Serve immediately or refrigerate for a few hours to meld flavors.
    9. Enjoy as a nutritious meal option. Note: Calorie count may vary based on ingredient brands.
