    Fiesta Chicken Casserole Recipe

     

    This Fiesta Chicken Casserole is a comforting, flavor-packed dish that’s perfect for family dinners or potlucks. Loaded with tender rotini pasta, juicy chicken, zesty taco seasoning, and melty cheese, it’s a meal everyone will love. The combination of salsa, black beans, and corn adds a Mexican-inspired twist. Customize the spice level to your liking and garnish with fresh toppings like cilantro and avocado. It’s easy to make, reheats beautifully, and is guaranteed to become a weeknight favorite!

    Ingredients:

    2½ cups uncooked rotini pasta

    1 cup sour cream

    1 cup salsa (your favorite!)

    1 packet mild taco seasoning

    ½ teaspoon cumin

    ½ teaspoon garlic powder

    ½ teaspoon onion powder

    1 can (15 oz) corn, drained

    1 can (15 oz) black beans, drained & rinsed

    2½ cups cooked chicken (shredded or diced)

    2 cups shredded cheese (Colby Jack, Cheddar, or your favorite blend)

    Instructions:

    1. Prep the Oven:
    Preheat oven to 350°F. Spray a 9×13-inch baking dish with cooking spray and set aside.

    2. Cook the Pasta:
    Boil rotini pasta to al dente following package instructions. Add 1 teaspoon salt to the water for extra flavor.

    3. Mix the Sauce:
    In a large mixing bowl, combine sour cream, salsa, taco seasoning, cumin, garlic powder, and onion powder.

    4. Combine Ingredients:
    Once pasta is cooked, drain (don’t rinse!) and add it to the sauce mixture. Stir in corn, black beans, chicken, and 1 cup of shredded cheese.

    5. Assemble and Bake:
    Pour the mixture into the prepared baking dish. Sprinkle the remaining 1 cup of cheese evenly on top. Cover with foil and bake for 20 minutes.

    6. Finish Baking:
    Remove the foil and bake for an additional 5 minutes, or until the cheese is melted and bubbly.

    7. Garnish and Serve:
    Top with sour cream, diced tomatoes, chopped cilantro, and avocado slices for a fresh finish.

    Cheese Variety: Mix it up with Monterey Jack, Pepper Jack, or your favorite shredded cheese.
