Ingredients:
1 lb (450g) flank steak or sirloin, thinly sliced against the grain
2 tbsp soy sauce
1 tbsp oyster sauce
1 tbsp dark soy sauce
1 tsp sesame oil
1 tbsp freshly ground black pepper (adjust to taste)
1 tbsp cornstarch
1 tbsp vegetable oil
1 medium onion, sliced
1 red bell pepper, sliced
1 green bell pepper, sliced
3 cloves garlic, minced
1-inch piece fresh ginger, minced
2 tbsp water
1 tsp sugar (optional, to balance spice)
2 green onions, chopped (for garnish)
Instructions:
In a bowl, combine soy sauce, oyster sauce, dark soy sauce, sesame oil, black pepper, and cornstarch. Add sliced beef and toss to coat evenly. Let it marinate for 15–20 minutes.
Heat vegetable oil in a large skillet or wok over medium-high heat. Add the marinated beef and stir-fry for 2–3 minutes until browned. Remove and set aside.
In the same pan, add minced garlic and ginger. Stir-fry for 30 seconds until fragrant.
Toss in sliced onions and bell peppers. Stir-fry for 2–3 minutes until just tender but still crisp.
Return the beef to the pan. Add water and sugar (if using). Stir well to coat everything in the peppery sauce. Cook for 1–2 more minutes until the sauce slightly thickens.
Top with chopped green onions and serve hot over steamed rice or noodles.
Pro Tips:
For extra heat, sprinkle a pinch of crushed red pepper flakes.
Slice beef thinly against the grain for maximum tenderness.
