    Fiery Bang Bang Chicken Rice Bowl with Crispy Chili Garlic Sauce

    Looking for a spicy, flavorful, and satisfying dinner idea? This Bang Bang Chicken Rice Bowl combines crispy chicken bites, creamy chili garlic sauce, and fresh vegetables over fluffy rice. It’s the perfect balance of heat, crunch, and creaminess an easy weeknight meal that feels like restaurant-quality takeout!

    Ingredients:

    For the Crispy Chicken:
    1 lb (≈ 450 g) boneless chicken thighs or breasts, cut into bite-sized strips
    Salt & black pepper, to taste
    2 tablespoons cornstarch (for coating)
    2 tablespoons vegetable oil (for frying)
    For the Rice Bowl:
    2 cups cooked jasmine rice or short-grain rice (warm & fluffy)
    1 cucumber, thinly sliced
    1 carrot, julienned or shaved into ribbons
    1–2 green onions, sliced
    1 tablespoon sesame seeds (optional, for garnish)
    For the Bang Bang Chili Garlic Sauce:
    3 tablespoons mayonnaise (or light mayo)
    1 tablespoon sweet chili sauce
    1–2 tablespoons Sriracha (adjust heat level)
    1 fresh garlic clove, minced

    Instructions:

    Prepare the Chicken
    Season chicken strips with salt and pepper.

    Toss in cornstarch until lightly coated.

    Cook the Chicken
    Heat vegetable oil in a skillet over medium-high heat.

    Fry chicken until golden brown and crispy (about 6–8 minutes). Remove and set aside.

    Make the Bang Bang Sauce
    In a small bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, and minced garlic until smooth and creamy.

    Assemble the Rice Bowls
    Place a scoop of warm jasmine rice in each bowl.

    Top with crispy chicken, cucumber, carrot, and green onions.

    Drizzle generously with the Bang Bang sauce.

    Sprinkle sesame seeds for garnish.
