Feta Pasta Recipe: Easy Baked Feta and Tomato Pasta Dish
Ingredients:
– 10 ounces cherry tomatoes
– 1 block (8 oz) feta cheese
– 1/4 cup olive oil, plus more for drizzling
– 3 cloves garlic, minced
– 1/2 teaspoon red pepper flakes (optional)
– Salt and pepper to taste
– 10 ounces pasta (such as penne, fusilli, or spaghetti)
– Fresh basil leaves, for garnish
Directions:
1. Preheat the oven: Preheat to 400°F (200°C).
2. Prepare the baking dish:
– Place the cherry tomatoes in a baking dish.
– Place the block of feta cheese in the center of the tomatoes.
– Drizzle the olive oil over the tomatoes and feta.
– Add minced garlic and red pepper flakes if using.
– Season with salt and pepper.
3. Bake: Bake in the preheated oven for about 25-30 minutes, until the tomatoes burst and feta is golden on top.
4. Cook the pasta:
– While the feta and tomatoes are baking, cook the pasta according to package instructions in salted water until al dente.
– Reserve about 1 cup of pasta water before draining.
5. Combine pasta and baked feta:
– Remove the baking dish from the oven.
– Mash the feta and tomatoes with a fork until mixed.
– Add the cooked pasta and toss well to coat.
– If the sauce is too thick, add reserved pasta water a little at a time to reach the desired consistency.
6. *Serve:
– Serve the pasta hot, garnished with fresh basil leaves.
– Drizzle with a little more olive oil if desired.
