    Endive Gratin with Roquefort – A Classic French Comfort Food Recipe

    This Endive Gratin with Roquefort is a traditional French recipe that’s perfect for cozy dinners. With tender caramelized endives, a rich blue cheese sauce, crunchy walnuts, and a golden cheesy topping, this dish is the ultimate comfort food for winter.

    Ingredients (Serves 4)

    6 fresh, firm endives

    150 g (5 oz) Roquefort cheese, at room temperature

    100 ml (½ cup) heavy cream

    50 ml (¼ cup) whole milk

    50 g (½ cup) walnut halves, roughly chopped

    50 g (½ cup) grated Gruyère cheese

    1 tablespoon unsalted butter

    Salt and freshly ground black pepper

    How to Make Endive Gratin with Roquefort

    Preheat your oven to 200°C (400°F).

    Prepare the endives: remove damaged outer leaves, trim the base, and cut out the bitter core with a small V-shaped incision.

    In a large skillet, melt the butter and sear the halved endives cut-side down. Cook for 8–10 minutes, turning halfway, until golden and tender but not mushy.

    Meanwhile, prepare the Roquefort sauce: gently heat the cream and milk in a saucepan, add the crumbled Roquefort, and stir until smooth and creamy.

    Arrange the seared endives snugly in a baking dish. Pour the Roquefort sauce over them, making sure it seeps between each endive.

    Sprinkle with crushed walnuts and finish with an even layer of Gruyère.

    Bake for 20–25 minutes, until bubbling at the edges and beautifully golden on top.

    Tips & Variations

    Add diced ham or cooked chicken for a heartier gratin.

    Swap Roquefort with Blue d’Auvergne or Gorgonzola if you prefer a milder blue cheese flavor.
