    Easy Slow Cooker Jambalaya Recipe

    This Slow Cooker Jambalaya is a flavorful, one-pot Cajun classic perfect for busy weeknights. Packed with tender andouille sausage, shrimp, chicken, and vibrant bell peppers, it’s a hearty and satisfying dish. The slow cooker does all the work, blending bold Cajun spices with rice for a comforting meal. Customizable spice levels make it perfect for every palate. Serve it hot with fresh cilantro or parsley for an authentic Southern touch!

    Ingredients:

    1 package andouille sausage

    ½ pound uncooked shrimp (peeled and deveined)

    1 large boneless, skinless chicken breast (pounded to even thickness)

    3 bell peppers (green, red, and yellow or orange), diced

    1 white or yellow onion, diced

    2-3 jalapeños (seeds and stems removed; adjust for spice preference)

    1 ½ cups uncooked white rice

    2 cups low-sodium chicken broth

    1 30-ounce can crushed tomatoes

    1 tablespoon minced garlic

    3 tablespoons Cajun seasoning (store-bought or homemade)

    ½ teaspoon each salt and pepper (or to taste)

    Cilantro or parsley for garnish (optional)

    Instructions:

    1. Prepare the Ingredients: Slice the sausage into ¼-inch thick rounds. Remove tails from shrimp, if necessary. Dice the chicken into 1-inch cubes.

    2. Combine Ingredients: In a greased slow cooker, add the sausage, chicken, bell peppers, onion, jalapeños, chicken broth, crushed tomatoes, minced garlic, Cajun seasoning, salt, and pepper. Stir to mix well.

    3. Cook Low and Slow: Cover and cook on low for 3-4 hours.

    4. Add the Rice: Stir in the uncooked rice and cook for an additional 1-2 hours, or until the rice is tender and fully cooked.

    5. Finish with Shrimp: About 20 minutes before serving, add the shrimp, stir, and cook until they are pink and cooked through (approximately 15-20 minutes).

    6. Serve and Garnish: Stir the jambalaya, garnish with chopped cilantro or parsley (if desired), and serve hot.

    Tips for the Perfect Slow Cooker Jambalaya:

    Want more spice? Add a third jalapeño or a pinch of cayenne pepper.

    For a smokier flavor, use smoked andouille sausage.

    Use high-quality shrimp for the best taste in this Cajun-inspired dish.
