Ingredients:

1 tablespoon olive oil

1 pound fresh asparagus, ends trimmed and cut into 2-inch pieces

2 cups cherry tomatoes, halved

3 cloves garlic, minced

Salt & black pepper, to taste

1/4 cup chicken broth (or vegetable broth for a vegetarian option)

1 tablespoon fresh lemon juice

1/4 cup chopped fresh basil

1/4 cup chopped fresh parsley

1 package (about 20 oz) refrigerated cheese or spinach ravioli

 

Directions:

1. Cook ravioli according to package instructions; drain and set aside.

2. In a large skillet, heat olive oil over medium heat. Add asparagus and sauté for about 3 minutes.

3. Add cherry tomatoes and garlic, cooking for another 2 minutes until tomatoes soften.

4. Season with salt and pepper. Pour in chicken broth and lemon juice; simmer for 2 minutes.

5. Toss cooked ravioli into the skillet, mixing gently to coat with sauce.

6. Stir in fresh basil and parsley.

7. Serve warm and enjoy this light and flavorful vegetarian pasta dinner!
