Ingredients:

 

– 1 1/2 cups all-purpose flour
– 1 tsp baking powder
– 1/2 tsp baking soda
– 1/4 tsp salt
– 1/2 cup unsalted butter, softened
– 1 cup granulated sugar
– 2 large eggs
– 1/2 cup coconut milk
– 1 tsp vanilla extract
– 1 cup crushed pineapple, drained
– 1/2 cup shredded coconut
– 1 cup whipped cream
– 1/2 cup cream cheese, softened
– 1/2 cup powdered sugar
– 1/2 cup pineapple chunks for topping
– 1/4 cup toasted coconut flakes for garnish

Instructions:

 

1. Preheat Oven:

Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.

2. Dry Ingredients:

In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.

3. Cream Butter and Sugar:

In a large bowl, beat the unsalted butter and granulated sugar until light and fluffy.

Add the large eggs one at a time, beating well after each addition.

4. Wet Ingredients:

Mix in the coconut milk and vanilla extract.

5. Combine Mixtures:

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
