    Easy Mexican Taco Casserole Bake

     

    Easy Mexican Taco Casserole Bake

     

    Looking for a flavorful, crowd-pleasing dinner idea? This Easy Mexican Casserole is the ultimate weeknight comfort food packed with bold Tex-Mex flavors! Made with seasoned ground beef, gooey cheddar cheese, crunchy tortilla chips, and zesty Rotel tomatoes, it’s a hearty one-pan meal everyone will love!

    Ingredients:

    1 lb lean ground beef (or substitute with ground turkey for a lighter option)

    1 (15 oz) can Ranch Style beans

    1 (10-12 oz) bag tortilla chips, crushed (you won’t need the whole bag)

    1 (10 oz) can Rotel diced tomatoes & green chilies, undrained

    1 small onion, chopped

    2 cups shredded cheddar cheese, divided

    1 (1 oz) packet taco seasoning mix

    1 (10.5 oz) can unsalted cream of chicken soup

    ½ cup water

    Sour cream and salsa, for topping

    Instructions:

    1. Preheat oven to 325°F (163°C).

    2. In a large skillet, brown the ground beef over medium heat. Drain excess fat.

    3. Stir in the Ranch Style beans, Rotel tomatoes, onion, taco seasoning, cream of chicken soup, and water. Simmer until heated through and well combined.

    4. Grease a 9×13-inch casserole dish. Create layers:

    First, a layer of crushed tortilla chips

    Then, a layer of the beef and bean mixture

    Top with half the shredded cheese

    Repeat the layers again.

    5. Cover with foil and bake for 20–30 minutes, until hot and bubbly.

    6. Remove foil and broil for 2–3 minutes until the cheese turns golden and bubbly (optional).

    7. Let the casserole rest for 5–10 minutes before serving. Top with a dollop of sour cream and your favorite salsa.

    Optional Tips:

    Swap in ground turkey for a leaner take.

    Add jalapeños, corn, or black olives for extra flavor.

    Serve with a side of guacamole and Spanish rice.
