    Easy Kiwi Cheesecake

    Delight in this easy, no-bake kiwi cheesecake featuring a creamy vanilla base and a refreshing kiwi jelly topping.

    Easy Kiwi Cheesecake

     

     

    Ingredients:

    For the Crust:
    – 1.5 cups graham cracker crumbs
    – 6 tbsp melted butter

    For the Vanilla Cheesecake:
    – 1 cup heavy whipping cream (divided)
    – 1 tbsp unflavored gelatin
    – 2/3 cup sugar
    – 16 oz cream cheese (2 blocks), softened to room temperature
    – 1 tsp vanilla extract

    For the Kiwi Jelly Topping:
    – 4 kiwis, peeled and pureed
    – 1/2 cup water
    – 1/2 cup sugar
    – 1 tsp agar agar powder
    – 2 drops green food coloring (optional)
    – 1-2 kiwis, sliced for decoration

    Directions:

    Prepare the Crust:
    1. Preheat Oven: Preheat the oven to 350°F (180°C).
    2. Mix Ingredients: Combine graham cracker crumbs with melted butter until crumbly.
    3. Form Crust: Press the mixture into a 10-inch springform pan.
    4. Bake Crust: Bake for 12 minutes, then set aside to cool.

    Vanilla Cheesecake Filling:
    5. Prepare Gelatin: Combine 1/4 cup heavy cream with gelatin, let sit for 5 minutes, then microwave for 30 seconds and let cool.
    6. Whip Cream: Whip the remaining heavy cream until stiff peaks form.
    7. Mix Cream Cheese: In another bowl, beat cream cheese and sugar until smooth.
    8. Combine Mixtures: Fold the cream cheese mixture into the whipped cream, add vanilla extract, and mix well.
    9. Add Gelatin: Add the gelatin mixture and combine thoroughly.
    10. Spread Filling: Spread this mixture over the cooled crust and chill in the refrigerator for at least 8 hours or overnight.

    Kiwi Jelly Topping:
    11. Puree Kiwis: Puree 4 peeled kiwis in a blender.
    12. Prepare Jelly: In a saucepan, combine kiwi puree, water, sugar, agar agar, and food coloring (if using).
    13. Cook Jelly: Heat over medium heat, simmer for 2-3 minutes until dissolved, then let cool for 5-10 minutes.
    14. Add Topping: Pour over the chilled cheesecake and refrigerate for at least 30 minutes.
    15. Decorate: Decorate with sliced kiwis before serving.

    Tips:
    – Ensure cream cheese is at room temperature for a smooth filling.
    – Chill the cheesecake thoroughly to set the layers properly.
    – Graham crackers can be substituted with other cookies like shortbread or Oreos.
