Easy Hamburger Stew tonight
Ingredients:
1 lb ground beef
1 tablespoon olive oil
1 medium onion, diced
2 cloves garlic, minced
2 carrots, peeled and sliced
2 celery stalks, sliced
1 can (14.5 oz) diced tomatoes, undrained
1 can (15 oz) tomato sauce
2 cups beef broth
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper to taste
2 cups frozen mixed vegetables
1 cup water (optional, to adjust consistency)
Directions:
In a large pot, heat olive oil over medium heat. Add ground beef, onion, and garlic. Cook until beef is browned and onions are soft.
Drain excess fat and return pot to heat. Add carrots, celery, diced tomatoes, tomato sauce, beef broth, oregano, and basil. Season with salt and pepper.
Bring to a boil, then reduce heat to low. Simmer for 30 minutes, stirring occasionally.
Add frozen mixed vegetables and continue to simmer for another 10 minutes, or until vegetables are tender. Add water if you prefer a thinner stew.
Adjust seasoning to taste and serve hot.
