Easy Ground Beef & Cabbage Stir-Fry

Ingredients:
1 lb (450g) lean ground beef
1/2 head green cabbage, shredded
1 small carrot, julienned
3 garlic cloves, minced
1 tbsp fresh ginger, minced
2 tbsp low-sodium soy sauce
1 tbsp hoisin sauce
1 tsp sesame oil
1 tbsp rice vinegar
1 tsp chili garlic sauce (optional, for heat)
2 green onions, sliced
1 tbsp olive or avocado oil
Salt and pepper, to taste
Cooked brown rice or cauliflower rice, for serving
Instructions:
Shred cabbage, julienne carrot, mince garlic and ginger, and slice green onions.
Heat oil in a large skillet or wok over medium-high heat. Add ground beef, season with salt and pepper, and cook until browned. Remove and set aside.
Add garlic, ginger, and the white parts of green onions to the skillet. Cook 1–2 minutes until fragrant.
Add shredded cabbage and carrots. Stir-fry for 3–4 minutes until tender-crisp.
Return beef to skillet. Add soy sauce, hoisin sauce, sesame oil, rice vinegar, and chili garlic sauce. Mix well and heat through.
Top with green onion slices. Serve over brown rice or cauliflower rice for a healthy Chinese stir-fry meal.
