    Easy Garlic Herb Roasted Chicken with Baby Potatoes

    Looking for a simple, satisfying meal? This Garlic Herb Roasted Chicken with Baby Potatoes is the ultimate easy dinner recipe! Juicy chicken breasts are roasted alongside buttery baby potatoes, all coated in a rich garlic herb sauce. Perfect for a comforting one-pan meal!

    Ingredients:

    4 boneless, skinless chicken breasts

    1 lb baby potatoes (red and yellow mixed)

    4 garlic cloves, minced

    2 tbsp fresh parsley, chopped

    2 tbsp olive oil

    2 tbsp butter

    2 tbsp fresh lemon juice

    ½ cup chicken broth or stock

    1 tsp paprika

    Salt & black pepper to taste

     

    Instructions:

    1. Preheat oven to 400°F (200°C).

    2. In a large oven-safe skillet or baking dish, sear the chicken in olive oil over medium heat until golden on both sides (about 2-3 minutes per side).

    3. Toss the baby potatoes with olive oil, salt, and pepper, then arrange them around the chicken in the dish.

    4. In a small saucepan, melt the butter with minced garlic, lemon juice, and chicken broth. Stir in paprika, then pour the sauce over the chicken and potatoes.

    5. Roast in the oven for 35-40 minutes, or until chicken is cooked through and potatoes are tender.

    6. Garnish with chopped parsley and drizzle with the buttery pan sauce before serving.

     

    Recipe Tips:

    For extra flavor, sprinkle some red pepper flakes for a mild kick.

    Swap lemon juice with balsamic vinegar for a deeper, tangy glaze.

    This dish pairs perfectly with crusty bread or a fresh green salad.
