    30 g butter + extra butter for molds

    25 g flour

    30 cl milk

    100 g grated Emmental cheese

    4 eggs + 1 extra egg white

    1 pinch nutmeg

    Step 1 – Prepare the Creamy Cheese Béchamel

    Preheat the oven to 200°C. Separate egg yolks from whites. Add the yolks to the cheese béchamel for extra richness. Whip the egg whites until stiff peaks form, then gently fold them into the mixture. This step helps create a light, airy soufflé texture while keeping it soft and fluffy.

    Step 3 – Bake Until Golden and Puffy
