Easy Baked Sweet and Sour Chicken Recipe

Ingredients:
1 lb chicken, cut into 1-inch strips
2 eggs, room temperature
1 cup flour
1 cup cornstarch
2 cups basmati rice
2 cups water
2 tsp sunflower oil
1 green bell pepper, cubed
1 red bell pepper, cubed
8 oz sour sauce
Green onions for garnish
Instructions:
1. In three bowls, prepare the coating: one with cornstarch, one with flour, and one with whisked eggs.
2. Dip chicken pieces in cornstarch, then egg, and coat with flour.
3. Heat sunflower oil in an Instant Pot or skillet. Cook chicken for 5 minutes on each side.
4. Add green and red peppers along with sour sauce, mixing well.
5. Seal the Instant Pot, set to high pressure for 3 minutes. Release pressure, remove chicken, and set aside.
6. In the Instant Pot, combine basmati rice with 2 cups of water. Cook on high pressure for 3 minutes, then let it naturally release for 17 minutes.
7. Serve sweet and sour chicken with rice, garnished with green onions.
