Easy Baked Honey Dijon Chicken
Ingredients:
– 1 lb Chicken breasts, boneless, skinless
– 2 cloves Garlic, minced
– 2 sprigs Rosemary
– 1/2 cup Chicken broth
– 2 tbsp Dijon mustard
– 2 tbsp Whole grain Dijon mustard
– 1/4 cup Honey
– 1 tbsp Soy sauce
– Salt and pepper to taste
– 2 tbsp Apple cider vinegar
Instructions:
1. Preheat your oven to 375°F (190°C).
2. In a small bowl, combine minced garlic, Dijon mustard, whole grain Dijon mustard, honey, soy sauce, and apple cider vinegar until well mixed.
3. Season chicken breasts with salt and pepper on both sides.
4. Place chicken breasts in a baking dish or oven-safe skillet.
5. Pour the honey Dijon mixture over the chicken breasts, ensuring even coating.
6. Arrange rosemary sprigs around the chicken breasts in the baking dish or skillet.
7. Pour chicken broth into the bottom of the baking dish or skillet.
8. Cover with aluminum foil and bake for 25-30 minutes, or until chicken is cooked through and reaches an internal temperature of 165°F (74°C).
9. Remove foil and switch oven to broil.
10. Broil chicken for an additional 3-5 minutes, or until top is golden brown and caramelized.
11. Let chicken rest for a few minutes before serving.
