    Double Chocolate Zucchini Bread

    This ultra-moist double chocolate zucchini bread is the perfect way to sneak in veggies while satisfying your chocolate cravings! Rich, fudgy, and loaded with chocolate chips, this easy quick bread recipe is a hit for breakfast, dessert, or snack time.

     

    Ingredients:

    1 ½ cups grated zucchini (moisture removed)

    1 ½ cups all-purpose flour

    ½ cup unsweetened cocoa powder

    1 cup granulated sugar

    ½ teaspoon baking powder

    ½ teaspoon baking soda

    ¼ teaspoon salt

    ½ cup vegetable oil

    2 large eggs

    1 teaspoon pure vanilla extract

    ½ cup semi-sweet chocolate chips (plus extra for topping)

     

    Instructions:

    1. Preheat your oven to 350°F (175°C). Lightly grease or line a standard loaf pan with parchment paper.

    2. In a large bowl, sift together flour, cocoa powder, baking powder, baking soda, and salt.

    3. In a separate bowl, whisk together oil, sugar, eggs, and vanilla until smooth. Stir in the grated zucchini.

    4. Gradually combine the wet and dry ingredients until fully incorporated. Fold in the chocolate chips.

    5. Pour the batter into the prepared pan. Optional: sprinkle extra chocolate chips on top.

    6. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out mostly clean.

    7. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
