Ingredients:
– 4 skinless, boneless chicken breasts
– Salt and pepper to taste
– 2 tbsp olive oil
– 1 cup fresh cherry tomatoes
– ½ cup basil pesto (homemade or store-bought)
– ½ cup heavy cream
– ¼ cup freshly grated Parmesan cheese
– 2 cloves garlic, minced
– Fresh basil leaves for garnish
Instructions:
1. Preheat oven to 375°F (190°C).
2. Season chicken breasts with salt and pepper on both sides.
3. Heat olive oil in a large ovenproof skillet over medium-high heat. Add chicken breasts and sear until golden brown, about 3-4 minutes per side. Remove chicken and set aside.
4. In the same skillet, add cherry tomatoes, pesto, minced garlic, and heavy cream. Stir to combine, then add grated Parmesan cheese. Cook for 2-3 minutes until sauce thickens slightly and tomatoes begin to burst.
5. Return chicken to skillet, spooning sauce over the breasts.
