Delicious Chicken and Mushroom Stir-Fry Recipe

Ingredients:
– 2 tablespoons oil for cooking, divided
– 1 lb (500g) boneless chicken thighs, sliced into bite-sized pieces
– 1/2 teaspoon salt, for seasoning
– 1/4 teaspoon cracked black pepper
– 2 teaspoons Italian seasoning blend
– 1/2 teaspoon garlic powder
– 1/2 teaspoon onion powder
– 1/2 teaspoon paprika
– 8 oz (250g) sliced brown mushrooms
– 3 tablespoons (2 oz | 60g) butter
– 1 brown shallot, finely chopped
– 1 green bell pepper (capsicum), deseeded and diced
– 4 cloves garlic, minced
– 2 tablespoons freshly chopped parsley
Directions:
1. In a large pan over medium-high heat, add 1 tablespoon of oil. Once hot, add the chicken pieces. Season with salt, pepper, Italian seasoning, garlic powder, onion powder, and paprika. Cook until chicken is browned and fully cooked, about 5-6 minutes. Transfer cooked chicken to a plate and set aside, keeping it warm.
2. In the same pan, add the remaining oil and 1 tablespoon of butter. Add the sliced mushrooms and cook until they begin to brown and soften, approximately 3-4 minutes.
3. Add the remaining butter to the pan. Once melted, sauté the shallots and bell peppers until tender and fragrant, about 3 minutes. Stir in the minced garlic and cook for an additional 30 seconds.
4. Return the cooked chicken and any accumulated juices to the pan. Toss everything together to coat evenly in the pan juices. Cook until the vegetables are soft and the chicken is heated through, approximately 1-2 minutes more.
