Crockpot Velvety Chicken Parmesan Soup

Ingredients:
2 boneless, skinless chicken breasts
1 onion, diced
2 cloves garlic, minced
4 cups chicken broth
1 can (14.5 oz) diced tomatoes
1 teaspoon dried basil
1 teaspoon Italian seasoning
½ cup heavy cream
1 cup shredded mozzarella cheese
¼ cup grated Parmesan cheese
Salt & pepper to taste
1 tablespoon olive oil
Directions:
1. In a skillet, heat olive oil over medium heat. Sauté onion and garlic for 3-4 minutes until soft and fragrant.
2. Transfer sautéed onions and garlic into your Crockpot (slow cooker).
3. Add chicken breasts, chicken broth, diced tomatoes, dried basil, and Italian seasoning.
4. Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours, until chicken is tender.
5. Remove the chicken, shred it with two forks, and return to the Crockpot.
6. Stir in heavy cream, mozzarella, Parmesan, salt, and pepper. Cook uncovered for an additional 15 minutes to melt the cheeses and thicken the soup.
7. Serve hot, garnished with extra Parmesan or fresh basil if desired.
