    Crockpot Texas Tamale Meatballs

     

    This flavorful recipe combines the savory essence of tamales with the ease of juicy meatballs, all slow-cooked to perfection. Made with masa harina, ground beef, and Tex-Mex spices, these meatballs are smothered in enchilada sauce and diced tomatoes with green chilies for a rich, saucy finish. Black beans and melted cheddar cheese add layers of flavor and texture, making it an irresistible comfort food. Perfect for busy weeknights, parties, or potlucks, this crockpot recipe is a hands-off meal everyone will love.

    Ingredients:

    2 pounds ground beef

    1 cup masa harina (traditional corn flour for tamales)

    1/2 cup chicken broth

    1 large egg, beaten

    1/4 cup finely chopped onion

    2 garlic cloves, minced

    1 teaspoon ground cumin

    1 teaspoon chili powder

    1/2 teaspoon smoked paprika

    Salt and black pepper to taste

    1 (15-ounce) can black beans, drained and rinsed (optional)

    1 (10-ounce) can diced tomatoes with green chilies, undrained

    1/2 cup enchilada sauce

    1/2 cup shredded cheddar cheese

    Fresh cilantro, for garnish

    Lime wedges, for serving

    Directions:

    1. Prepare the Meatball Mixture
    In a large bowl, combine ground beef, masa harina, chicken broth, beaten egg, onion, garlic, cumin, chili powder, smoked paprika, salt, and pepper. Mix thoroughly to form a flavorful base.

    2. Shape the Meatballs
    Roll the mixture into 1.5-inch meatballs and arrange them neatly in your crockpot.

    3. Make the Sauce
    In a separate bowl, combine diced tomatoes with green chilies and enchilada sauce. Pour this over the meatballs, ensuring they’re evenly coated.

    4. Cook to Perfection
    Cover the crockpot and cook:

    On low heat for 6-7 hours

    Or on high heat for 3-4 hours
    until the meatballs are tender and fully cooked.

    5. Add the Finishing Touches
    About 15 minutes before serving, stir in the black beans (if using) and sprinkle shredded cheddar cheese on top. Cover and let the cheese melt into gooey perfection.

    6. Serve & Garnish
    Garnish with fresh cilantro and serve with lime wedges for a zesty finish.
