Ingredients:
Base:
1 tbsp olive oil
1 ½ lbs boneless, skinless chicken breasts (or thighs for extra flavor)
1 small onion, diced
2 cloves garlic, minced
1 large carrot, diced
2 ribs celery, diced
Liquids & Pasta:
1 (14.5 oz) can diced tomatoes, undrained
4 cups chicken broth
1 cup orzo pasta
Seasoning:
1 tsp dried oregano
1 tsp dried basil
½ tsp red pepper flakes (optional, for heat)
Salt and pepper, to taste
Finish & Garnish:
2 cups fresh spinach, roughly chopped
Freshly grated Parmesan cheese, for garnish
Directions:
Prepare the Base: Heat olive oil in a skillet over medium heat. Sauté onion, garlic, carrot, and celery for 5 minutes until softened.
Add Chicken: Transfer vegetables to the crockpot and place chicken on top.
Add Liquids: Pour in diced tomatoes with juice and chicken broth. Stir gently.
Season: Add oregano, basil, red pepper flakes, salt, and pepper.
Cook: Cover and cook on low 6-7 hours or high 3-4 hours, until chicken is tender.
Add Orzo: About 30 minutes before serving, stir in orzo. Cover and cook until tender.
Finish & Garnish: Stir in spinach until wilted. Serve hot with freshly grated Parmesan cheese.
