Ingredients:

  • 1 lb red potatoes (cut into ½” pieces)
  • 2 large carrots (peeled and thinly sliced)
  • 1 rib celery (chopped)
  • ½ medium onion (finely chopped)
  • 3 cloves garlic (minced)
  • 1½ teaspoons salt
  • 1 teaspoon dried parsley
  • 1 teaspoon Italian seasoning
  • ½ teaspoon black pepper
  • 1½ cups low sodium chicken broth or vegetable broth
  • 2 tablespoons cornstarch
  • ⅔ cup heavy cream
  • 3 boneless skinless chicken breasts (about 1.5 lbs)
  • 1 cup frozen peas (optional)
  • ⅓ cup shredded Parmesan cheese

Instructions:

  1. Add potatoes, carrots, celery, onion, garlic, salt, parsley, Italian seasoning, and black pepper to your 4-6 quart slow cooker.
  2. Whisk together chicken broth and cornstarch and pour into the slow cooker with the heavy cream.
  3. Add the chicken breasts and press down slightly into the liquid.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours until the potatoes are tender.
  5. Once the chicken is cooked, remove the chicken breasts, chop or shred them, and stir back into the stew with the peas (if using) and Parmesan cheese.
