    Ingredients for Crockpot Beef Barley Soup

    1.5 lbs beef chuck roast, trimmed and cut into 1-inch pieces

    1–1.5 lbs potatoes, peeled and diced (Yukon Gold or Russet preferred)

    2 carrots, peeled and chopped into 1/2-inch pieces

    1 medium yellow or sweet onion, diced

    2 celery stalks, sliced lengthwise, then chopped

    4 garlic cloves, minced

    2 tbsp tomato paste

    2 tbsp Better Than Bouillon beef base (optional, but highly recommended)

    2 tsp Worcestershire sauce

    1/2 tsp kosher salt

    1/4 tsp black pepper

    2 sprigs fresh thyme

    2 bay leaves

    6 cups reduced-sodium beef broth

    2/3 cup pearl barley

    Instructions for the Best Beef Barley Soup

    1. Optional Step for Extra Flavor:
    Heat 1 tbsp vegetable oil in a skillet over medium-high heat. Sear the beef cubes for 1–2 minutes per side to lock in flavor.

    2. Combine Ingredients:
    Add the beef, potatoes, carrots, onion, celery, garlic, tomato paste, beef base, Worcestershire sauce, salt, pepper, thyme, bay leaves, broth, and barley to your slow cooker. Stir to mix.

    3. Cook in the Slow Cooker:

    Cook on LOW for 7–8 hours for maximum tenderness.

    Alternatively, cook on HIGH for 4–5 hours if you’re short on time.

    4. Finishing Touches:
    Remove the bay leaves and thyme stems before serving. Ladle into bowls and enjoy!
