Crock Pot French Onion Pot Roast

Ingredients:
3–4 lb chuck roast (well-marbled for best tenderness)

2 bay leaves
3 large yellow onions, thinly sliced (about 4 cups)
1 large sweet onion, thinly sliced
4 cloves garlic, minced
2 tablespoons balsamic vinegar
1 tablespoon brown sugar
2 tablespoons unsalted butter
2 cups beef broth (low-sodium preferred)
2 tablespoons Worcestershire sauce
2 tablespoons cornstarch + 3 tablespoons cold water (optional, for thickening)
1 cup shredded Gruyère or Swiss cheese (optional)
Fresh parsley, chopped (for garnish)
Directions:
Heat olive oil in a skillet over medium-high heat. Season the chuck roast with salt and pepper, then sear on all sides for 3–4 minutes per side. This step boosts flavor but can be skipped for convenience.
Layer sliced yellow and sweet onions in the bottom of the crock pot. Add garlic, thyme, and bay leaves.
