    Crispy Zucchini Patties | Delicious & Healthy Zucchini Fritters

    These tasty and versatile zucchini patties are the perfect way to use up extra zucchini and create a healthy, satisfying meal!  Whether you enjoy them as a snack, side dish, or light main course, these crispy zucchini fritters are sure to be a hit.

    Ingredients You’ll Need:

    – 2 medium zucchini, grated
    – 1/2 teaspoon salt
    – 1/4 cup chopped onion
    – 1/4 cup chopped bell pepper
    – 1/4 cup chopped fresh parsley
    – 1/2 cup bread crumbs
    – 1/4 cup grated Parmesan cheese
    – 1 egg, beaten
    – 1/4 teaspoon black pepper
    – Vegetable oil, for frying

    Instructions:

    1. In a large bowl, combine the grated zucchini and salt. Let it stand for about 10 minutes to draw out excess moisture.
    2. Use a paper towel or cheesecloth to squeeze out any excess moisture from the zucchini.
    3. Add the chopped onion, bell pepper, parsley, bread crumbs, grated Parmesan cheese, beaten egg, and black pepper to the zucchini. Mix well until all ingredients are evenly combined.
    4. Shape the mixture into patties, making sure they are firm and hold together.
    5. Heat a large skillet over medium heat and add enough vegetable oil to coat the bottom of the pan.
    6. Fry the zucchini patties for 2-3 minutes on each side, or until they are golden brown and cooked through.
    7. Serve your crispy zucchini patties with your favorite dipping sauce, or enjoy them as a delightful side dish.

    – For an extra crunch, try adding a touch of panko breadcrumbs to the mixture.
