    Crispy Skillet Potatoes with Onions

    These crispy skillet potatoes with onions are golden on the outside, soft and fluffy on the inside, and packed with rich buttery flavor. Made with simple pantry ingredients and ready in under 30 minutes, this recipe is perfect for breakfast, brunch, or an easy side dish for any meal.

    1.5 lb (680 g) Yukon Gold potatoes, cubed
    (Russet potatoes also work well for extra crispiness)
    2 tbsp olive oil
    2 tbsp unsalted butter
    ½ cup white onion, finely chopped
    (cut smaller than the potato cubes)
    ¾ tsp kosher salt
    ¼ tsp garlic powder (optional but highly recommended)
    Black pepper, to taste
    ⏱ Prep Time
    5 minutes
    Cut potatoes into even cubes (about 1.5–2 cm) so they cook evenly.
    Chop the onion into pieces about ¼ the size of the potato cubes it shrinks as it cooks.

    Directions:

    Heat a large skillet over medium heat. Add olive oil and butter and let them melt until shimmering.
    Add the potatoes and spread them into an even layer.
    Cover and cook for 10 minutes without stirring this steams the inside.
    Uncover and gently flip the potatoes. Sprinkle the chopped onion evenly over the top.
    Cover again and cook for another 10 minutes, allowing the potatoes to fully tenderize and the onion to soften.
    Uncover, season with salt, garlic powder, and black pepper.
    Cook uncovered for a few more minutes, flipping occasionally, until the potatoes are deeply golden and crispy.

    Pro Tips for Extra Crispy Potatoes:

    Do not overcrowd the pan use a wide skillet.
    Resist stirring too often; let a crust form before flipping.
    If onions brown too fast, lower the heat slightly and add a tiny splash of water.
    Uncover again to re-crisp the potatoes.
