    Crispy Cheesy Potato Balls

     

    These Cheesy Potato Balls are crispy on the outside and irresistibly gooey inside, making them the perfect snack or appetizer. Whether fried or baked, they deliver a delicious combination of mashed potatoes and melted cheese. The crunchy breadcrumb coating adds a satisfying texture with every bite. Pair them with ranch, marinara, or sour cream for an extra flavor boost. Try these golden bites for parties, game nights, or anytime you crave something cheesy and delicious!

    Ingredients:

    2 cups mashed potatoes (about 2-3 large potatoes)
    1 cup shredded cheese (cheddar, mozzarella, or your favorite blend)
    1/4 cup grated Parmesan cheese
    1/4 cup chopped green onions or chives (optional)
    1/2 teaspoon garlic powder
    1/2 teaspoon onion powder
    Salt and pepper to taste
    1 cup breadcrumbs (panko for extra crispiness!)
    1-2 eggs, beaten (for coating)
    Oil for frying (vegetable or canola)

    Instructions:

    Prepare the Mashed Potatoes:

    If you don’t have leftover mashed potatoes, boil and mash potatoes. Season with salt, pepper, and your favorite spices. Let them cool slightly.

    Mix the Filling:

    In a large bowl, combine mashed potatoes, shredded cheese, Parmesan, green onions (if using), garlic powder, onion powder, salt, and pepper. Mix well.

    Shape the Balls:

    Take small portions of the mixture and roll them into 1-1.5 inch balls.

    Coat the Potato Balls:

    Set up a breading station:
    Dip each potato ball into the beaten eggs
    Roll in breadcrumbs until fully coated.

    Fry Until Crispy:

    Heat oil to 350°F (175°C) in a deep skillet.
    Fry the potato balls in batches for 3-4 minutes until golden brown and crispy.
    Drain on a paper towel to remove excess oil.

    Baked Option: Want a healthier version? Bake at 400°F (200°C) for 20-25 minutes, lightly spraying with oil before baking.
