Ingredients:

3 small russet potatoes, peeled
1/3 cup all-purpose flour
1 large egg
3 tbsp butter, softened
3/4 cup shredded cheddar cheese
1 tsp salt
1/2 tsp black pepper
Oil, for frying

Instructions:

Parboil the potatoes
Bring a pot of salted water to a boil. Add peeled potatoes and cook for 6 minutes. Drain, then rinse with cold water until cool enough to handle.

Grate the potatoes
Shred the cooled potatoes with a grater and transfer them to a medium mixing bowl.

Mix the hash brown batter
Add flour, egg, softened butter, shredded cheddar cheese, salt, and pepper. Stir until well combined.

Shape into patties
Lightly grease a 1/3 cup measuring cup to scoop the mixture. Form into even patties with your hands.

Fry until golden and crispy
Heat a few tablespoons of oil in a skillet over medium-high heat. Cook hash brown patties in batches for about 3 minutes per side, until golden brown and crisp. Add more oil as needed.

Serve hot and melty
Transfer fried hash browns to a paper towel–lined plate. Serve warm with sour cream, ketchup, or your favorite dipping sauce.
