Crispy Air Fryer Chicken Rissoles

Ingredients:
1 lb (500g) ground chicken
1 small zucchini, grated (excess liquid removed)
1 small onion, finely chopped
1 clove garlic, minced
½ cup breadcrumbs
1 egg
½ cup shredded cheese (cheddar or mozzarella)
1 tsp dried oregano
½ tsp salt
½ tsp black pepper
1 tbsp olive oil (for brushing or spraying)
Instructions:
Preheat your air fryer to 375°F (190°C).
In a mixing bowl, combine ground chicken, zucchini, onion, garlic, breadcrumbs, egg, cheese, oregano, salt, and pepper. Mix well.
Shape into small rissoles (about golf ball size) and flatten slightly.
Lightly brush or spray with olive oil.
Place in the air fryer basket in a single layer. Cook for 12-15 minutes, flipping halfway, until golden brown and cooked through (internal temp 165°F/75°C).
