    Creamy Zuppa Toscana Soup Recipe

    Warm up with this homemade Zuppa Toscana Soup, a rich and creamy Italian-inspired recipe packed with Italian sausage, tender potatoes, fresh kale, and garlic simmered in a savory chicken broth. This comforting soup tastes just like the famous Olive Garden Zuppa Toscana, but even better when made from scratch at home!

     

    Ingredients (Serves 6):

    1 lb Italian sausage (mild or spicy, your choice)
    4 large potatoes, peeled and diced into cubes
    1 medium onion, chopped
    3 cloves garlic, minced
    4 cups chicken broth
    2 cups kale, chopped (stems removed)
    1 cup diced tomatoes (optional)
    1 cup heavy cream
    2 tbsp olive oil
    Salt and pepper, to taste
    Red pepper flakes (optional for spice)
    Parmesan cheese, for garnish (optional)

     

    Instructions:

    Cook the Sausage: In a large pot or Dutch oven, heat olive oil over medium heat. Remove sausage from casing, crumble, and cook until browned.

    Remove sausage and set aside, leaving the drippings in the pot.

    Sauté Aromatics: Add chopped onion and garlic to the pot. Cook for 3-4 minutes until soft and fragrant.

    Add Potatoes & Broth: Stir in diced potatoes and chicken broth. Bring to a boil, then reduce to a simmer for 10-15 minutes, or until potatoes are tender.

    Add Kale, Sausage & Tomatoes: Return the sausage to the pot along with kale and tomatoes (if using). Simmer another 5-7 minutes until kale is wilted and flavors combine.

    Make it Creamy: Slowly stir in the heavy cream. Heat gently without boiling.

    Season with salt, black pepper, and red pepper flakes.

    Serve & Enjoy: Ladle into bowls and top with Parmesan cheese. Serve with warm, crusty bread for a true Italian comfort meal.

     

    Tips & Variations:

    Swap kale with spinach for a milder green.
    Use turkey or chicken sausage for a lighter version.
    Store leftovers in the fridge for up to 3 days.
