    Creamy White Chickpea Chili Recipe

    If you’re craving a hearty and flavorful vegan chili recipe, this White Chickpea Chili is the perfect choice. Packed with chickpeas, poblano peppers, salsa verde, and creamy dairy-free cream cheese, this one-pot meal is protein-rich, comforting, and ready in under an hour. Whether you’re looking for a healthy plant-based chili or a delicious weeknight dinner, this recipe is sure to impress!

    Ingredients:

    2 tablespoons olive oil
    1 yellow onion, diced
    4 cloves garlic, minced
    1 jalapeño, diced (optional for heat)
    3 poblano peppers, deseeded and chopped
    2 teaspoons cumin
    1 teaspoon smoked paprika
    1 teaspoon garlic powder
    1 teaspoon onion powder
    ½ teaspoon chili powder
    ½ teaspoon black pepper
    8 ounces vegan cream cheese (such as Kite Hill)
    ½ cup salsa verde (homemade or store-bought)
    2–4 cups vegetable broth (or vegan chicken broth)
    2 (15-ounce) cans chickpeas, drained and rinsed
    1 lime, juiced
    ½ bunch fresh cilantro, chopped

    Optional Toppings:

    Non-dairy yogurt or sour cream
    Tortilla chips
    Sliced green onions
    Avocado slices
    Lime wedges
    Extra cilantro

    Directions:

    In a large pot, heat olive oil and cook onion until translucent (about 5 minutes). Add garlic and stir.
    Cook peppers: Add jalapeño (optional) and poblano peppers. Cook for 5–7 minutes until softened.
    Season well: Stir in cumin, smoked paprika, garlic powder, onion powder, chili powder, and pepper. Cook until fragrant.
    Make it creamy: Add vegan cream cheese and salsa verde, stirring until smooth.
    Add broth & simmer: Pour in 2–4 cups broth, depending on thickness preference, and bring to a simmer.
    Add chickpeas: Stir in chickpeas and lime juice. Simmer 10–15 minutes for flavors to blend.
    Finish & garnish: Remove from heat, stir in cilantro, and serve with toppings like avocado or tortilla chips.
