    Creamy Tuscan Chicken Pasta with Mushrooms, Spinach & Roasted Red Peppers

    A rich and comforting Creamy Tuscan Chicken Pasta loaded with tender chicken, earthy mushrooms, sweet peas, sun-dried tomatoes, smoky roasted red peppers, and fresh spinach all simmered in a luxurious creamy Parmesan sauce. This easy 30-minute Tuscan pasta recipe is perfect for busy weeknights, cozy family dinners, or satisfying meal prep.

    Pasta & Chicken
    12 oz pasta (penne, fettuccine, or spaghetti)

    2 tbsp unsalted butter
    1 onion, finely chopped
    3 cloves garlic, minced
    8 oz mushrooms, sliced
    ½ cup sun-dried tomatoes, chopped
    1 cup peas
    ½ cup roasted red peppers, chopped
    2–3 cups fresh spinach
    Creamy Tuscan Sauce
    1 tsp dried thyme
    ¼ tsp red pepper flakes (optional)
    1 cup chicken broth
    1 cup heavy cream
    3–4 tbsp cream cheese
    ½ cup grated Parmesan cheese
    Fresh parsley (for garnish)

    How to Make Creamy Tuscan Chicken Pasta:

    Boil pasta in salted water until al dente. Drain and set aside.

    Heat olive oil in a skillet. Season chicken with salt and pepper, cook until golden and fully cooked (5–7 minutes). Remove and set aside.

    In the same pan, melt butter. Add onion and sauté until soft. Add garlic and mushrooms; cook until mushrooms are tender.

    Stir in sun-dried tomatoes, peas, roasted red peppers, and spinach. Cook until spinach wilts.

    Pour in the chicken broth and simmer. Lower heat and whisk in the heavy cream, cream cheese, and Parmesan until velvety smooth. Return chicken to the skillet.

    Add pasta to the skillet and toss until fully coated in the creamy Tuscan sauce. Season with thyme and optional red pepper flakes.

    Top with fresh parsley and serve warm.
