    Creamy Tuscan Chicken Pasta

     

    Indulge in the irresistible flavors of creamy Tuscan chicken pasta a rich and comforting Italian-inspired dinner loaded with tender chicken, sun-dried tomatoes, fresh spinach, and a luscious garlic Parmesan cream sauce. Perfect for busy weeknights or a romantic dinner at home, this easy chicken pasta recipe will be a family favorite!

    Ingredients for Creamy Tuscan Chicken Pasta

    400 g (14 oz) pasta (penne, rigatoni, or fettuccine)

    2 tbsp extra virgin olive oil

    2 large chicken breasts, thinly sliced

    3 cloves garlic, minced

    1 cup sun-dried tomatoes, chopped (oil-packed for extra flavor)

    2 cups fresh baby spinach

    1 cup heavy cream

    ½ cup chicken broth

    ½ cup freshly grated Parmesan cheese

    1 tsp Italian seasoning

    Salt & black pepper to taste

    Fresh basil or parsley, chopped, for garnish

     

    Step-by-Step Instructions

    1. Cook the Pasta

    Bring a large pot of salted water to a boil.
    Cook pasta until al dente according to package instructions. Drain and set aside, reserving ½ cup pasta water.

    2. Cook the Chicken

    In a large skillet over medium heat, heat olive oil.
    Season chicken with salt, pepper, and Italian seasoning.
    Cook until golden brown and fully cooked (about 5–6 minutes). Remove from skillet and set aside.

    3. Make the Creamy Garlic Parmesan Sauce

    In the same skillet, sauté garlic and sun-dried tomatoes for 1–2 minutes until fragrant.
    Add heavy cream and chicken broth, stirring well.
    Simmer gently for 3–4 minutes until slightly thickened.
    Stir in Parmesan cheese until melted into a smooth sauce.

    4. Combine Pasta, Chicken & Spinach

    Add the cooked chicken, spinach, and pasta to the skillet.
    Toss well, adding reserved pasta water if needed to loosen the sauce.
    Cook for 2 minutes until spinach wilts and everything is heated through.

    5. Serve & Garnish

    Serve hot, garnished with fresh basil or parsley and extra Parmesan for an authentic Italian pasta touch.

    Lighter version Swap heavy cream for half-and-half or coconut milk.
