Creamy Sweet Potato Chowder Recipe

2 large sweet potatoes, peeled and cubed
1 tbsp olive oil
1 onion, chopped
1 cup corn kernels (fresh or frozen)

4 cups vegetable broth
1 can (14 oz) coconut milk
1 tsp dried thyme
1 tsp ground paprika
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Directions:
Sauté Aromatics: Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté for 3–4 minutes until soft and fragrant.
Cook Sweet Potatoes: Add sweet potatoes, corn, vegetable broth, and dried thyme. Bring to a boil, then reduce heat and simmer 20–25 minutes until sweet potatoes are tender.
Add Creaminess: Stir in coconut milk and ground paprika. Simmer another 5 minutes for rich, creamy flavor.
Blend Slightly: Use an immersion blender to puree the soup lightly, leaving some chunks for texture. Alternatively, blend half in a regular blender and return to pot.
