This Spinach Artichoke Chicken with Cottage Cheese is a creamy, protein-packed, and low-carb meal idea. Juicy baked chicken breasts are topped with a cheesy spinach and artichoke mixture for the perfect healthy weeknight dinner.

Ingredients:

4 boneless, skinless chicken breasts
2 tbsp olive oil
Salt and black pepper, to taste
2 garlic cloves, minced
2 cups fresh spinach, chopped
1 cup canned artichoke hearts, drained & chopped
½ cup cottage cheese
¼ cup grated Parmesan cheese
½ tsp dried oregano
½ tsp red pepper flakes (optional)

Instructions:

Preheat oven to 375°F (190°C).
Season chicken breasts with salt and pepper.
Sear chicken in olive oil for 2–3 minutes per side until golden brown. Remove and set aside.
In the same skillet, sauté minced garlic, spinach, and chopped artichokes until spinach wilts.
Mix in cottage cheese, Parmesan, oregano, and red pepper flakes until creamy.
Place chicken in a baking dish and spoon the spinach-artichoke mixture on top.
Bake for 20–25 minutes or until the chicken reaches 165°F (74°C).
Serve warm with quinoa, cauliflower rice, or roasted veggies.
