Ingredients:
2 tbsp butter or olive oil
8 oz mushrooms, sliced or quartered
1 medium onion, diced
2 cloves garlic, minced
1 tsp fresh thyme, chopped
1/4 cup flour (or rice flour for gluten-free option)
1/2 cup extra broth
6 cups vegetable or chicken broth
8 oz cheese tortellini (gluten-free if needed)
1/2 cup grated Parmesan cheese (Parmigiano Reggiano)
10 oz baby spinach, coarsely chopped
1/2 cup cream or milk
Salt and pepper to taste
Directions:
In a large pot, melt butter or heat oil over medium heat. Add mushrooms and onion, cooking 5–7 minutes until softened. Stir in garlic and thyme for 1 more minute until fragrant.
Sprinkle flour over the mushroom mixture and stir for 1–2 minutes to remove the raw flour taste.
Pour in broth and stir, scraping any brown bits from the bottom. Simmer 2–3 minutes until slightly reduced.
Gradually pour in vegetable or chicken broth, stirring continuously. Bring to a gentle simmer.
Add cheese tortellini and cook according to package instructions (3–5 minutes) until tender.
Once tortellini is cooked, stir in spinach and cream (or milk). Cook 2–3 minutes until spinach wilts and soup is heated through.
Add grated Parmesan cheese and season with salt and pepper to taste.
