Creamy Spaghetti with Spinach & Sun-Dried Tomato Chicken
A rich and comforting pasta dish loaded with tender chicken, creamy Parmesan sauce, fresh spinach, and the bold flavor of sun-dried tomatoes the perfect weeknight comfort food!
Ingredients:
12 oz spaghetti
2 tbsp olive oil
2 chicken breasts, sliced into thin strips
Salt and black pepper, to taste
3 cloves garlic, minced
½ cup sun-dried tomatoes, chopped
2 cups fresh spinach leaves
½ cup chicken broth
1 cup heavy cream
½ cup grated Parmesan cheese
1 tsp dried basil
¼ tsp red pepper flakes (optional)
Fresh parsley, chopped (for garnish)
Instructions:
Bring a large pot of salted water to a boil. Cook spaghetti until al dente according to package directions. Drain and reserve ½ cup of pasta water.
In a large skillet, heat olive oil over medium heat. Season chicken strips with salt and pepper. Sauté until golden and cooked through, about 5–7 minutes. Remove from skillet and set aside.
In the same skillet, add minced garlic and chopped sun-dried tomatoes. Sauté for 1–2 minutes until fragrant.
Stir in fresh spinach and cook until wilted. Pour in chicken broth and let it simmer gently.
Lower the heat, then stir in heavy cream, Parmesan, dried basil, and red pepper flakes (if using). Simmer until the sauce thickens slightly.
Return the cooked chicken and spaghetti to the skillet. Toss well to coat in the creamy sauce, adding a splash of pasta water if needed for extra creaminess.
Top with fresh parsley and extra Parmesan. Serve warm for a delicious, restaurant-style pasta dinner at home!
