Creamy Slow-Cooker Beef Stroganoff
This hearty and comforting beef stroganoff recipe is slow-cooked to perfection with tender chunks of beef, savory mushrooms, and a creamy sour cream sauce. The ultimate family-friendly dinner served over buttery egg noodles or fluffy rice!
Ingredients:
1 kg beef chuck or stewing beef, cut into bite-sized pieces
1 onion, finely chopped
3 garlic cloves, minced
250 g fresh mushrooms, sliced
1 cup beef broth or stock
1 tbsp Worcestershire sauce
1 tsp Dijon mustard
1 tsp paprika
½ tsp salt
¼ tsp black pepper
1 cup sour cream
2 tbsp cornstarch (optional, for thickening)
2 tbsp water (optional, for thickening)
Fresh parsley, chopped (for garnish)
Cooked egg noodles or white rice for serving
Instructions:
1. Layer the Goodness:
Add beef, onion, garlic, mushrooms, beef stock, Worcestershire sauce, Dijon mustard, paprika, salt, and pepper to your slow cooker. Stir to combine.
2. Set It & Forget It:
Cook on LOW for 6–8 hours or HIGH for 4–5 hours, until beef is fork-tender.
3. Thicken It Up (Optional):
Mix cornstarch and water to make a slurry and stir it in during the last 30 minutes if you want a thicker sauce.
