    Creamy Shrimp and Grits Casserole with Cheddar Crust

    Get ready for a true Southern comfort classic this Creamy Shrimp and Grits Casserole is loaded with juicy shrimp, rich cheddar cheese, and buttery grits baked into one satisfying dish. Perfect for family dinners, holidays, or a cozy weeknight meal!

     

    Ingredients:

    1 lb fresh shrimp, peeled and deveined

    1 cup stone-ground grits (or quick-cooking grits)

    4 cups chicken broth (for extra flavor)

    1 cup sharp cheddar cheese, shredded

    1 cup heavy cream

    1/2 cup diced bell pepper (any color)

    1/2 cup diced onion

    2 cloves garlic, minced

    2 tbsp unsalted butter

    1 tsp Cajun seasoning

    Salt and black pepper to taste

    Chopped green onions, for garnish

     

    Directions:

    1. Cook the Grits:
    In a medium saucepan, bring chicken broth to a boil. Slowly whisk in the grits, reduce heat, and simmer until thick and creamy (about 10–15 minutes). Stir in butter, heavy cream, and half of the shredded cheddar cheese. Season with salt and pepper. Set aside.

    2. Sauté the Shrimp:
    In a skillet over medium heat, add a little butter or oil. Sauté the diced onions and bell peppers for 2–3 minutes. Add garlic and cook another minute. Stir in the shrimp and Cajun seasoning. Cook until shrimp just turns pink, about 3 minutes. Remove from heat.

    3. Assemble the Casserole:
    Preheat oven to 375°F (190°C). In a greased baking dish, spread half of the cheesy grits. Add the shrimp mixture over the top, then cover with the remaining grits. Sprinkle the remaining cheddar cheese evenly on top.

    4. Bake It:
    Bake for 20–25 minutes, or until the cheese is bubbly and golden. Let cool for a few minutes before serving.

    5. Garnish and Serve:
    Sprinkle with chopped green onions for a pop of flavor and color. Serve hot!
