    Creamy Seafood Chowder with Seared Scallops, Celery & Garlic

    Indulge in this luxurious creamy seafood chowder, loaded with fresh scallops, shrimp, lobster, and white fish, perfectly balanced with celery, garlic, and tender vegetables. This hearty chowder is not only comforting and flavorful but also packed with protein, omega-3s, and essential vitamins, making it a nutritious meal for seafood lovers.

    Ingredients:

    12 large sea scallops
    1 cup firm white fish, cut into bite-size pieces
    1 cup cooked lobster meat, chopped
    18 large shrimp, peeled and deveined
    2 tablespoons butter or olive oil
    2 celery stalks, finely diced
    2 garlic cloves, minced
    2 large potatoes, cubed
    2 large carrots, sliced
    4 cups water or seafood stock for extra flavor
    1 teaspoon salt
    3 cups heavy cream
    ¼ teaspoon black pepper
    2 tablespoons fresh chives, chopped
    2 tablespoons fresh dill, chopped

    Directions:

    Pat the scallops dry with paper towels. Season lightly with salt and black pepper. Set aside.

    In a large pot, heat butter or olive oil over medium heat. Add diced celery and minced garlic, cooking until fragrant and tender, about 3–4 minutes.

    Add cubed potatoes, sliced carrots, and water. Bring to a boil, then reduce heat and simmer for 15–20 minutes, or until vegetables are tender.

    Gently stir in white fish, lobster meat, and shrimp. Cook 5–7 minutes until shrimp turn pink and fish is cooked through.

    Pour in heavy cream and stir to combine. Simmer an additional 5 minutes. Adjust salt and pepper to taste.

    In a skillet, heat butter or olive oil over high heat. Sear scallops 2–3 minutes per side until golden brown and cooked through.

    Ladle chowder into bowls, top with seared scallops, and garnish with fresh chives and dill. Enjoy a rich, comforting seafood chowder perfect for any occasion!
