    Creamy Rotel Pasta with Ground Beef & Cheese

    Looking for a quick and easy dinner recipe that’s creamy, cheesy, and full of flavor? This Rotel Pasta with ground beef combines tender pasta, spicy Rotel tomatoes with green chilies, and a rich, cheesy tomato cream sauce. It’s the perfect weeknight comfort food that the whole family will love!

     

    Ingredients:

    12 oz pasta (penne, rotini, or your favorite noodles)

    1 lb ground beef (or Italian sausage for extra flavor)

    1 small onion, diced

    3 cloves garlic, minced

    1 can (10 oz) Rotel tomatoes with green chilies

    1 can (15 oz) tomato sauce

    1 cup heavy cream (or half & half)

    2 cups shredded cheddar cheese (or Velveeta for a creamier texture)

    1 tsp chili powder

    1 tsp paprika

    1 tsp salt

    ½ tsp black pepper

    Fresh parsley or green onions for garnish

     

    Directions:

    1. Cook pasta according to package directions until al dente. Drain and set aside.

    2. Brown the meat: In a large skillet, cook ground beef (or sausage) with diced onion until browned. Drain excess fat. Add garlic and cook for 1 minute.

    3. Make the sauce: Stir in Rotel tomatoes, tomato sauce, chili powder, paprika, salt, and black pepper. Let simmer for 5 minutes.

    4. Add cream & cheese: Pour in heavy cream, stir until smooth, then add cheddar cheese (or Velveeta) and mix until melted and creamy.

    5. Combine pasta & sauce: Toss cooked pasta into the cheesy Rotel sauce until fully coated.

    6. Serve & enjoy: Garnish with parsley or green onions and serve hot!
