1 small onion, diced
3 cloves garlic, minced
1 can (10 oz) Rotel tomatoes with green chilies
1 can (15 oz) tomato sauce
1 cup heavy cream (or half & half)
2 cups shredded cheddar cheese (or Velveeta for a creamier texture)
1 tsp chili powder
1 tsp paprika
1 tsp salt
½ tsp black pepper
Fresh parsley or green onions for garnish
Directions:
1. Cook pasta according to package directions until al dente. Drain and set aside.
2. Brown the meat: In a large skillet, cook ground beef (or sausage) with diced onion until browned. Drain excess fat. Add garlic and cook for 1 minute.
