Creamy Potato & Hamburger Soup

Ingredients:
1 lb ground beef
1 onion, chopped
3 cloves garlic, minced
4 cups diced potatoes
4 cups beef broth
2 cups milk
1 cup shredded cheddar cheese
½ cup frozen corn kernels
½ cup frozen peas
½ cup diced carrots
½ tsp dried thyme
½ tsp dried rosemary
Salt & black pepper to taste
Chopped fresh parsley for garnish (optional)
Instructions:
Cook the Ground Beef: In a large pot or Dutch oven, brown the ground beef over medium-high heat, breaking it into crumbles. Drain excess fat.
Sauté the Aromatics: Add chopped onion and minced garlic to the pot and cook for 2-3 minutes until fragrant.
Simmer the Potatoes: Stir in diced potatoes, beef broth, thyme, rosemary, salt, and black pepper. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes or until the potatoes are tender.
Add the Veggies: Toss in the frozen corn, peas, and carrots. Simmer for another 5-7 minutes until tender.
Make It Creamy: Pour in the milk and stir in the cheddar cheese until melted and creamy. Adjust thickness with more milk if needed.
