    Creamy Parmesan Sun-Dried Tomato Chicken

    This Creamy Parmesan Sun-Dried Tomato Chicken is a rich, restaurant-style dish made in just one skillet. Juicy pan-seared chicken breasts are smothered in a luxuriously creamy garlic Parmesan sauce with bold sun-dried tomatoes. It’s an easy weeknight chicken recipe that tastes fancy but comes together fast!

    For the Chicken:
    1.25 lbs boneless, skinless chicken breasts
    Salt and black pepper, to taste
    1 tsp garlic powder
    1–2 tbsp olive oil
    For the Creamy Parmesan Sun-Dried Tomato Sauce:
    2 tbsp butter
    3 cloves garlic, minced
    ½ cup sun-dried tomatoes, chopped (oil-packed, drained)
    1 cup heavy cream
    ½ cup grated Parmesan cheese
    ½ tsp Italian seasoning
    Salt and black pepper, to taste
    ¼ tsp red pepper flakes (optional)
    2 tbsp fresh parsley, chopped
    Optional for Serving:
    Cooked pasta, rice, or mashed potatoes
    Extra Parmesan cheese

    Instructions:

    Season chicken breasts with salt, pepper, and garlic powder.
    Heat olive oil in a large skillet over medium-high heat.
    Sear chicken for 4–5 minutes per side until golden and cooked through. Remove and set aside.

    In the same skillet, melt butter. Add garlic and sauté until fragrant.
    Stir in sun-dried tomatoes and cook for 1–2 minutes.
    Pour in heavy cream and bring to a gentle simmer.
    Add Parmesan cheese and Italian seasoning, stirring until smooth and creamy.
    Season with salt, pepper, and red pepper flakes.

    Return chicken to the skillet and spoon sauce over the top.
    Simmer for 2–3 minutes to let the flavors meld.

    Garnish with fresh parsley and extra Parmesan.
    Serve over pasta, rice, or mashed potatoes.
