Creamy Parmesan Italian Sausage Soup

Ingredients:
1 lb Italian sausage (casings removed)
1 medium onion, diced
3 cloves garlic, minced
4 cups chicken broth
1 cup heavy cream
1 cup grated Parmesan cheese
1 cup baby spinach
1 cup diced tomatoes (canned or fresh)
1 tsp dried basil
1 tsp dried oregano
½ tsp salt
½ tsp black pepper
1 tbsp olive oil
Optional: Croutons or extra Parmesan for garnish
Instructions:
Heat olive oil in a large pot over medium heat. Add Italian sausage and cook until browned, breaking it into small pieces. Remove from pot and set aside.
In the same pot, cook the onion until translucent (about 3–4 minutes). Add garlic and cook for another minute until fragrant.
Return sausage to the pot. Add chicken broth, diced tomatoes, basil, oregano, salt, and pepper. Bring to a gentle boil, then reduce heat and simmer for 10 minutes.
Lower the heat. Stir in heavy cream and grated Parmesan cheese until melted and silky smooth.
Stir in baby spinach and cook until wilted, about 2 minutes.
Ladle into bowls and garnish with extra Parmesan or crunchy croutons for that perfect finishing touch!
