Ingredients:
2 tbsp butter
1 tbsp olive oil
1 onion, finely chopped
2 garlic cloves, minced
500 g (1 lb) mushrooms, sliced (button, cremini, or mixed)
1 tsp thyme (fresh or dried)
3 tbsp all-purpose flour
4 cups vegetable or chicken stock
1 cup heavy cream
Salt & pepper, to taste
