Ingredients:

4 Tbsp unsalted butter
1 medium onion, finely chopped
1 lb cremini mushrooms, sliced (or baby bella/portobello)
2 Tbsp all-purpose flour
1 Tbsp paprika (Hungarian or sweet)
3 cups chicken broth (or vegetable broth for vegetarian option)
1 cup milk
1 Tbsp tamari (or low-sodium soy sauce)
½ cup sour cream
1 Tbsp fresh lemon juice
3 Tbsp fresh parsley, chopped
2 Tbsp fresh dill, chopped
1 Tbsp fresh thyme, chopped
Fine salt, black pepper, and a pinch of chili pepper, to taste

Directions:

In a large pot, melt butter over medium heat. Add chopped onion and sauté until translucent (about 5 minutes).

Add mushrooms and cook until tender and golden brown, about 8–10 minutes, releasing their natural juices.

Sprinkle in flour and paprika, stirring constantly. Cook for 2 minutes to eliminate raw flour taste.

Slowly pour in the chicken broth while stirring to avoid lumps. Bring to a gentle simmer and cook for 10 minutes.

Stir in milk, tamari, sour cream, and lemon juice. Season with salt, black pepper, and a pinch of chili pepper.

Blend until smooth using an immersion blender (or a regular blender in batches). Stir in the fresh herbs and heat through for another 2–3 minutes.
