Ingredients:
For the Chicken
1 ½ pounds boneless, skinless chicken breasts, cut into 1-inch pieces
1 ½ teaspoons Creole seasoning
½ teaspoon onion powder
¾ teaspoon garlic powder
1 ½ tablespoons extra virgin olive oil
For the Vegetables
2 broccoli crowns, chopped
1 cup grape tomatoes
¼ cup sun-dried tomatoes
Pinch of crushed red pepper flakes
½ teaspoon dried oregano
For the Creamy Tuscan Sauce
½ cup half-and-half
¼ cup shredded Parmesan cheese
1 cup shredded mozzarella cheese
Instructions:
Heat olive oil in a large skillet over medium heat. Add the chicken pieces and season with Creole seasoning, onion powder, and garlic powder. Cook for 5–7 minutes until golden brown and fully cooked. Remove from skillet and set aside.
In the same skillet, add broccoli, grape tomatoes, sun-dried tomatoes, red pepper flakes, and oregano. Sauté for about 5 minutes until the broccoli is tender and the tomatoes are slightly blistered.
Lower the heat and pour in the half-and-half. Stir in Parmesan and mozzarella cheese, mixing until the cheese melts and the sauce becomes smooth and creamy.
Return the cooked chicken to the skillet. Stir well to coat the chicken in the creamy Tuscan sauce. Simmer for 2–3 minutes until heated through.
